Pretty Marvelous Stuff.

Read between the lines. OK, not really. Yesterday I was a bottomless pit. I had my 6 mini meals as per usual, but I was SO hungry. The kind of night where you eat salty then you want sweet...and it goes on and on. Was it real hunger? Probably not. Boredom, amongst other things, I'm sure. ANYWAY all this to say, I made cookies. I mean healthy-delicious-this-is-too-good-to-be-true cookies.

Ingredients:
  • 3/4 cup rolled oats
  • 3 tbsp. brown sugar
  • 1/2 tsp. baking powder
  • 1/2 cup almond butter (I use the PC organic kind) 
  • 1/4 cup egg whites
  • Sprinkle of cinnamon
Preparation:
  • Preheat oven to 350 degrees, line baking sheet with parchment paper or foil.
  • In a large bowl mix all of the ingredients together until combined.
  • Portion medium balls of dough onto the cookie sheet (they will pretty much maintain that shape through baking, so make sure to shape them as desired).
  • Bake 10-12 minutes until the edges are beginning to brown.
I mean, they're no Chips Ahoy!, but they satisfied my craving.
