Gluten Free Baked Falafel
- 1 cup (250 mL) Eden Organic Garbanzo Beans (I use a whole can)
- 2 tbsp (30 mL) gluten-free bread crumbs, such as PaneRiso Foods Bread Crumbs (you can also use regular bread if you want)
- 1 egg white
- 2 tsp (4 mL) ground cumin
- 1 tsp indian masala mix spice
- Pinch each salt and pepper
- 1 green onion, chopped
- 1 clove garlic, minced
- 1 tbsp (15 mL) chopped cilantro
- 2 tsp (10 mL) minced jalapeño pepper
Preparation
1. Preheat oven to
375°F/190°C.
2. In food processor,
pulse chickpeas (a.k.a. garbanzo beans). Add
bread crumbs, egg white, cumin, salt and pepper; puree until finely chopped.
Add onion, garlic, cilantro and jalapeño; pulse just until combined. Spoon
mixture into 12 greased mini muffin cups. Bake for 18 to 20 minutes or until
golden and firm to the touch. Let cool in pan for 10
minutes.
We had it with homemade hummus, salad and pita. Very filling and extremely tasty.
